On April 11th, it’s Cheese Fondue Day !
Last time, we shared with you the recipe of our favorite fondue : the fondue moitié-moitié (half-half).
This year, we let you discover another recipe : the Valais tomato fondue.
– 30 g of butter
– 1 crushed garlic clove
– 1 average onion finely chopped
– 3 crushed tomatoes or 1 box of crushed tomatoes (400 g), drained
– 500 g of Valais raclette cheese AOP, grated
– 300 g of Swiss cheese AOP (Gruyère), grated
– 3 dl of Valais white wine (Fendant)
– 3 short coffee spoons of Cornstarch
– 1 small glass of kirsch
– pepper and nutmeg
– 600-800 g of jacket potatoes
Melt the butter in the heavy saucepan. Fry the garlic and the onion, then add tomatoes. Sweat briefly then add the white wine. Add cheeses and bring to a boil slowly. Move constantly. Dilute the cornstarch with the kirsch, add. Continue to move well, bring again to a boil, and season with pepper and nutmeg.
Put the heavy saucepan on the stove.
How to taste ? Each cuts some potatoes in pieces in his plate and drizzle with fondue by means of a ladle.

That sounds amazing……we make fondue here once in a while but it’s EXTREMELY BASIC and this sounds truly heavenly.

Well … the first time when we came across tomato fondue it was in a restaurant at the top of Forclaz Pass. We observed but as we had already ordered “Valais crusts” we decided that that would be for another occasion.
And … we’ve had an occasion, in the same place, to eat tomato fondue.
I like that Swiss habit of sometimes eating jacket potatoes with fondue rather than pieces of bread, but if the taste of this fondue was pleasant, we were hampered, embarrassed, by the COLOUR …
Gosh, we had no idea there was a Fondue Day! And we all LOVE Fondue, too, not that they need a special day to partake in any! Thanks for your recipe!
